Inniskillin Gold Vidal Icewine 2008 Inniskillin Gold Vidal Icewine 2008

Inniskillin is now synonymous with top quality Icewine and consistently sets the bar at a much greater height than its competitors. This ice wine, made from frozen grapes so the juice is concentrated, is truly unique. A super balance between sugar and acidity gives layers of intense flavour and complexity.

The Niagara Peninsula is considered a cool climate viticulture region, and the mineral-rich soils are the result of melting glaciers that left behind large and varied deposits of gravel, sand and clay, as they receded approximately 13,000 years ago. Thanks to the warming influence of Lake Ontario and the Niagara River, the region's temperatures during the fruit-ripening phase are moderate and consistent.

The 2008 Icewine harvest brought three main picking times between 7th December 2008 and 14th January 2009. The Chardonnay grapes were the first to come in, followed by the Cabernet Franc, Riesling and lastly the Vidal. The grapes are harvested frozen naturally on the vine at Inniskillin's desired temperature of -10 Celsius.

The removal of ice crystals, separated from the frozen grapes during pressing concentrates the juice which is then fined and cleaned.

As this is icewine there is no maceration. A select yeast is used for fermentation where the temperature is approximately 15°C. Fermentation can take anywhere from two weeks to two months.

Vidal is aged for four months in French Oak then in stainless steel until its release in August 2011.

After bottling the icewine can age for 10 plus years under proper cellaring conditions.

The aromas of this unique Icewine show apricots and peaches along with candied brown sugar. The rich texture shows great balance of natural sugars and acidities and the oak ageing adds layers of complexity amidst the intense fruit flavours. Lingering aromas and flavours persist on the long finish.
